Coloured
potatoes can add some fun to a traditional potato recipe, but they tend
to be quite difficult to find at the local supermarket. For those that
want to enjoy colourful spuds, Greenvale AP recommends growing your own.
Here, we discuss some of the most popular coloured potato varieties.
All Blue
is a medium sized potato in a striking deep blue colour, which
Greenvale AP says not only tastes great, but stores well too. Its
texture works well with virtually all potato dishes. To keep its pretty
blue hue, it’s important not to overcook. This particular variety is
very robust, and usually matures mid to late season, with impressively
high yields. Yellow Finn potatoes, Greenvale AP says, have a
unique pear shape and golden coloured flesh. The coarser texture of this
variety lends itself well to mashed, boiled or baked potatoes.
Rose Finn Apple are,
as the name would suggest, a very pretty rose colour, with a deep
yellow flesh under the skin. These potatoes are however, slightly more
delicate and prone to disease. They also require steady watering over
the course of the season. Once they mature, they will keep for quite a
few months.
German Butterball is
a potato variety which Greenvale AP farmers say is distinguished by its
delicious flavour. The bright yellow skin and buttery flesh make this
oblong, medium sized potato the idea, all-purpose spud. One of the most
unusually coloured varieties is undoubtedly the Purple Peruvian.
This is the only fingerling which comes with purple flesh as well as
purple skin. The plants bear large sized tubers and are very resistant
to diseases such as scab. However they do require plenty of watering and
a rich soil in order to flourish.
A recent cultivar, which produces some fantastically high yields, is the Red Thumb. This has both red skin and red flesh, with long tubers and very tiny, shallow eyes. Another red potato is Red Gold;
the red-orange skin hides a pale yellow flesh. The round, uniform and
medium sized tubers are drought tolerant and disease resistant. Because
Red Gold are an early variety, Greenvale AP say that they are not
suitable for long term storage.
